Anybody can just open a can of food and serve it. Anybody. But at Dixie Kwik, we believe that a good meal must begin with fresh, quality food. We use fresh onions, fresh carrots, fresh basil, fresh potatoes, fresh broccoli and many other fresh ingredients to make our recipes. In fact, the only canned food we use is tomatoes and green beans. Let me tell you why.
The green beans are USDA Grade Fancy 4 sieve, harvested just in time to ensure tenderness, sweetness and good color, then cut to a uniform size. We then slow-simmer them for two hours with our own recipe using fresh onions, bacon and seasonings. These green beans fit our recipe well and you receive a consistent size bean.
The tomatoes we use are germinated from seeds inside climate-controlled greenhouses, then developed over a consistent, extended growing season, allowing the natural sugars of the tomato to develop. Vibrant red tomatoes are harvested at their peak and then packed within 4-6 hours of harvesting for an intense flavorful tomato. We use tomatoes in many of our recipes.
Bacon – Thick- Cut Applewood Smoked. Prepared in a smokehouse-style, this sugar-cured bacon is smoked over 100 percent real applewood chips. This bacon features only meat from extra-trim pork bellies.
Sausage Patties – A Whole Hog sausage using cuts from belly, loin, ham, picnic and shoulder.
We use quality Chicken Breast that are hand-deboned, then minimally processed and do not include any artificial ingredients or added preservatives.
The Beef Brisket is USDA Choice with ample marbling and is derived from the lower forequarter of beef. Brisket is highly prized for its beefy flavor, though its true tenderness potential is achieved only when cooked slowly at a low temperature for many hours. These briskets consist of the flat portion of the muscle only; the point has been removed. Deckle-off indicates hard fat and intercostal meat are removed. We cook our Beef Brisket low-and-slow for eight (8) hours.
We use Grade AA Butter, Grade A Large Eggs and Stone Ground Grits made from Premium U.S. Grade #1 corn.
Our Olive Oil is Filippo Berio, a rich, well-balanced, extra-virgin olive oil made from the first cold-press of the olives to offer an aromatic, full-flavored oil with a green-gold color and a rich peppery finish.
Corn – This cut, yellow, super sweet corn was harvested at the peak of freshness to ensure tender kernels, bright color, and sweetness, then individually quick-frozen.
Green Peas – Grade A – IQF – These sweet peas are harvested and individually quick frozen to ensure good flavor, color, and sweetness.
Our Brunswick Stew is a two-day process, starting with marinating the chicken, pork and beef. We then add seasonings, spices and a few vegetables and slow-cook for eight (8) hours. We put no BBQ in our Real Deal Brunswick Stew. Our recipe came directly from Brunswick, Georgia from the good folks at the Golden Isles Convention and Visitors Bureau located in Brunswick and Glynn County, Georgia.
Asiago Cheese – This premium cheese is a cross between sharp white cheddar and Parmesan in flavor. Nutty and salty with a smooth, buttery, texture.
Provolone Cheese – sliced right from the log for fresh cheese every time, this premium provolone provides the authentic Italian flavor of mozzarella, with a sharper, more piquant taste.
Mozzarella Cheese – A premium low moisture part skim mozzarella.
Parmesan Cheese – This premium quality imported Parmesan is sharp and nutty in flavor. Aged at least 10 months, the richness of 100 percent cow’s milk cheese helps to create memorable dishes. No fillers or preservatives.
Country Ham – We use Clifty Farm Country Ham for lunch and also for the Country Ham Biscuit.
Bar-B-Que Sauce – We use locally produced Foy’s Old Fashioned Bar-B-Que sauce. Based right here in Columbus, Foy’s has been making sauces since 1990.
