The meatloaf at Dixie Kwik Cafe has become one of our most popular meats. It is simply a good, down-home Southern meatloaf. It is not spicy, not dry, but just a good, moist blend of ground meat and seasonings.
Who makes our meatloaf? Wendy – the face you see when you walk through the door most every day.
Wendy, using a recipe developed by Ted, takes fresh, never frozen, lean ground beef, blends in seasonings and spices, then hand-mixes all that together, along with a little love and passion. She is serious about her meatloaf!
Any day that Wendy works, she makes the meatloaf. After mixing, she layers the meatloaf into the pan and then gently shapes it into a loaf.
The meatloaf is then cooked to a specified temperature to ensure it is well cooked but still moist and tender.
Once the meatloaf is cooked, it is allowed to rest for about 15 minutes before cutting. After the rest, Wendy slices the meatloaf into portions and then puts a light layer of meatloaf sauce (ketchup) on top of the meatloaf.
Now, she doesn’t cover the meatloaf in ketchup because there is nothing to hide. We want you to see the goodness of the meatloaf. We have plenty of ketchup available if you want to put more on your portion.
